Plates' chef, Wes Denney, is a native Carrolltonian, but his culinary experience reaches far beyond his hometown. Immediately prior to moving back to Carrollton to begin work on Plates, he was plucking fresh salmon from the oceanside markets in the state of Washington. While he has prepared the finest dishes for resort guests from the Painted Dessert to Olympic National Rain Forest, he also has made plenty of home-cooked barbecue for the good folks of North Carolina, who take their smoked pork very seriously. And, of course, Wes has spent many years in the kitchens of Carrollton, getting his start at the now legendary Spyro Gyro. From this breadth of experience, Wes puts together a very diverse menu. That award-winning barbecue is available; so is some of the best salmon you may have ever tasted. Plus, he loves to incorporate great Asian influences and, most importantly, the great Southern cooking he grew up eating. You will find Wes at the restaurant seven days a week for almost every meal. He is devoted to his craft and the business, and it shows.
